LOADED GUACAMOLE

Ingredients:
- 3 ripe avocados
- ½ cup whole corn kernels, tossed in 1 TBSP olive oil
- ½ green chilli, chopped
- 1 jalapeño, chopped
- 6 rosa tomatoes, chopped
- ½ cup coriander, chopped
- ½ red onion, chopped
- ½ lime, juiced
- 2 cloves of garlic, finely chopped
- 1 round of feta, crumbled
- Salt and pepper to season
Method:
- Scoop out the avocado into a bowl and mash with a fork.
- Add the garlic and lime juice, then season with salt & pepper.
- Combine the corn kernels with the chopped green chilli, then add the chopped jalapeño, tomatoes, coriander and onion.
- Garnish with feta, a sprinkling of chopped coriander, a few slices of jalapeno and a final seasoning of salt and pepper.
- Serve in a Consol Glass Montpellier bowl.
