MALVA PUDDING AND VANILLA ICE CREAM

Malva Pudding Ingredients:
- 1 cup Dark brown sugar
- ⅓ cup Melted butter (mix well)
- 2 Eggs (mix well)
- 1 tsp Apple cider vinegar
- 3 tsp Apricot jam
- 2 cups Flour
- 1 tsp Vanilla extract
- 2 cups Bicarbonate of soda
- 1 cup Milk
Syrup Ingredients:
- ¼ cup Brown sugar
- ⅓ cup Butter
- ½ cup Milk
- ¼ cup Water
- 1 tsp Apple cider vinegar
Method:

In a Consol bowl, mix melted butter and brown sugar, then add eggs and whisk until combined. Add apricot jam, apple cider vinegar, and milk.

Combine the dry ingredients and mix well. Transfer to a baking dish and bake at 180°C for 30 minutes.
For the Syrup:

In a saucepan, combine milk, water, butter, jam, vinegar, and sugar. Bring to a boil, stirring constantly, then let simmer for 5 minutes.

Pour the syrup over the malva pudding and let it soak in.
Serve in your Consol Glass Dip Jar 200ml and add vanilla ice cream on top.
