MALVA PUDDING AND VANILLA ICE CREAM

Malva Pudding
Ingredients:
1 cup Dark brown sugar
1/3 cup Melted butter (mix well)
2 Eggs (mix well)
1 tsp Apple cider vinegar
3 tsp Apricot jam
2 cups Flour
1 tsp Vanilla extract
2 cups Bicarbonate of soda
1 cup Milk
Syrup
Ingredients:
1/4 cup Brown sugar
1/3 cup Butter
1/2 cup Milk
1/4 cup Water
1 tsp Apple cider vinegar
Method:
- In a Consol bowl, mix melted butter and brown sugar, then add eggs and whisk until combined. Add apricot jam, apple cider vinegar, and milk.
- Combine the dry ingredients and mix well. Transfer to a baking dish and bake at 180°C for 30 minutes.
For the Syrup:
- In a saucepan, combine milk, water, butter, jam, vinegar, and sugar. Bring to a boil, stirring constantly, then let simmer for 5 minutes.
- Pour the syrup over the malva pudding and let it soak in.
Serve in your Consol Glass Dip Jar 200ml and add vanilla ice cream on top.
