Mediterranean Butterbean And Artichoke Salad-In-A-Jar
Makes 2 x 500ml Consol jars
or 4 smaller jars
2 tbsp olive oil 1/4 cup lemon juice
1 can butterbeans, drained and rinsed
A handful fresh cherry tomatoes
1 small red onion, sliced
1 jar preserved artichoke hearts roughly chopped
1/3 cup parsley, finely chopped
Half a teaspoon dried thyme
Salt and pepper to taste
1. In a small Consol Glass Yogi Jar add the olive oil and lemon juice and give it a good shake.
2. In a medium-sized bowl mix all the other ingredients together then divide the salad evenly into 2 Consol Preserve Jars.
You can keep them refrigerated for up to 5 days. Enjoy!
