BUTTERNUT SOUP IN A CONSOL GLASS JAR

Fills 4 x 500ml Consol Preserve Jars 

Ingredients:

15ml Soft margarine / butter
1 Onion, diced
2 Cloves garlic, crushed
1 tsp Cinnamon
1 kg Butternut squash, peeled and diced
750ml Water
1 Vegetable Stock
250ml Fat free yogurt

 

Method: 

  1. Melt the margarine/ butter in a pot, add the onion and garlic and fry until translucent.
  2. Add the cinnamon and fry for 2 minutes. Then add the diced butternut, water and vegetable stock, and stir well.
  3. Bring to the boil then reduce the heat and simmer for 25 - 30 minutes, or until the butternut is soft.
  4. Take off the heat and blend until smooth using a food processor or stick blender. Mix in the yoghurt and add seasoning to taste.
  5. Pour the soup into your 500ml Consol Preserve Jars and serve hot with bread.
  6. Save the rest for later on in the week!
