SPICED CRANBERRY & STRAWBERRY JAM

Ingredients:

3 cups Cranberries

3 cups Strawberries (remove stems)

3 cups Sugar

½ cup Water or fruit juice of choice

2 Cinnamon sticks

4 sprigs Rosemary
Method:

Wash the cranberries and strawberries, discarding any soft or spoiled fruit.

Combine the cranberries, strawberries, sugar, rosemary, cinnamon sticks and water (or juice) in a saucepan, then bring to a full rolling boil that continues even when stirred.

Stir frequently and let the mixture boil for 2 - 3 minutes.

Reduce the heat to medium and cook for a further 10 - 15 minutes, or until the jam coats the back of a spoon without sliding off.

While that’s cooking, sanitise the Consol Glass Festive Catering Jar and lid in a water bath filled with hot soapy water, or run them through a hot dishwasher cycle.

Remove the cranberry-strawberry mixture from the heat, then push it through a sieve (or pasta strainer) into a medium bowl, pressing to extract as much liquid and pulp as possible. Discard the skins, rosemary and cinnamon sticks left behind.

Carefully ladle the hot jam into the clean jar, then wipe the rim and screw the lid on tightly.

Submerge in a pot with boiling water for 10 - 15 minutes, ensuring the jar is covered by at least 2.5 cm of water.

Remove the jar from the water bath and set aside to cool completely.

For a festive touch when gifting, tie on twine and decorate with fresh cinnamon sticks and rosemary.
