SPICED POMEGRANATE FIZZ MOCKTAIL

Fizz, spice and everything nice! 

Bring some heat to your drinks menu when hosting this holiday season with our Spiced Pomegranate Fizz Mocktail. Honey, orange and cardamom syrup mingle with fresh pomegranate juice and a bubbly sparkle - all served in an elegant Consol Glass Festive Whiskey Tumbler.

Ingredients:

Syrup

  • 1 Orange

  • 4 tsp Green cardamom pods 

  • 1/3 cup Honey

  • 3 TBSP Water

  • Pinch Salt


Mocktails

  • Handful Ice

  • 3/4 cup Pomegranate juice

  • 300 ml Soda water

  • ¼ cup Fresh pomegranate seeds for garnish (optional)

Method:  

Syrup

  1. Use a vegetable peeler to remove 1 long strip of orange zest, leaving behind as much white pith as possible, then add the zest to a small saucepan.

  2. Slice 2 orange wheels and cut each halfway down the middle, then reserve for garnish.

  3. Juice the remaining orange until you have 3 tablespoons of juice, then add to the saucepan with the zest.

  4. Lightly bruise the cardamom pods using a mortar and pestle, or the back of a chef’s knife, then add to the saucepan along with honey, water and salt.

  5. Simmer over medium heat, stirring to combine. Allow to reduce then set to medium-low and cook gently, stirring occasionally, until slightly thickened - about 6 minutes.

  6. Remove from the heat and set aside to cool and steep for 30 minutes to thicken and intensify the flavours.

  7. Strain through a fine mesh sieve into a bowl, pressing on the pods and zest to extract maximum flavour. Discard the solids and you should have about ½ cup of syrup.

 

Mocktails

  1. Fill 4 Consol Glass Festive Whiskey Tumblers with ice.

  2. Add about 2 tablespoons of the honey-cardamom syrup to each glass.

  3. Pour in 3 tablespoons of pomegranate juice per glass and top with soda water (about ¼ cup each).

  4. Stir to combine, then garnish each glass with an orange slice and a few pomegranate seeds.
