THAI NOODLE SALAD WITH PEANUT SAUCE

Ingredients for 2 jars:
  • 100g cooked egg noodles - you can use whatever noodles you like
  • A handful of grated carrot
  • A handful of beetroot
  • A handful of purple and Dutch cabbage
  • A handful of baby spinach leaves
  • A few cherry tomatoes Salted peanuts - chopped
Peanut Dressing Ingredients:
  • ⅓ cup creamy peanut butter
  • 3 tbsp lime juice
  • 3 tbsp water
  • 3 tbsp brown sugar
  • 4 tsp rice wine vinegar
  • 4 tsp soy sauce
  • 1 tsp sesame oil
  • ¼ tsp fish sauce
  • ½ tsp minced ginger - optional
Method:
  1. Place a layer of noodles at the bottom of your Consol Jar then start adding all your other fresh ingredients, building up layers until you get to the top.

  2. In a small bowl, whisk together all the peanut dressing ingredients until smooth.

  3. Pour some dressing into the separate & very handy mini jar attached to the Consol lid. Close your jar up.

  4. When you're ready to eat, add the peanut dressing to the noodle salad and enjoy!

  5. P.S. You can chop & change what goes into them, but below is a yummy combo of fresh veggies, noodles & a delicious sweet & sour peanut butter dressing!
